The conditions where I would prefer the Delphin are in steep 2m to 2.5m waves which we get in the North Irish Sea when the up to 9m tide is running out against the incoming swell and wind. The Delphin is a more specialised design targeted towards catching waves and playing in the surf zone. Stability in both boats is pretty comparable over a wide range of conditions. The Virgo has much less rocker than the Delphin so it will be easier to maintain a higher average speed. The Delphin, having more rocker, is very manoeuvrable and great fun in waves, including those short steep waves that might cause the Virgo to bury its bow. With regard to the three boats you mention the Valley Sirona is the outlier it is much longer and is orientated much more towards being an all round day paddling/short touring boat. The Delphin and Gemini SP are both more specialised rough water, surf, rockhopping play boats. They both perform that role excellently so a big decider would be which one fits you best. There might be stocks left of the previous 0.8 standard FE sail. You should be able to get it a good bit cheaper. It is more forgiving for a beginner especially in gusty winds but does not go upwind as well and its overall power is a bit down on the CZ sail.
